Bajra or pearl millet is an important coarse grain crop and considered to be the poor man’s staple nourishment. It is a grayish colour millet seed which is gluten free, high in energy and rich in fibers. It is used to make flour, bread, porridge and "couscous". It is ground along with Juwar and Chana to make multigrain flour. Bajra flour is popularly used in India for making Bhakri (flat bread). It is a “high-energy” cereal that contains carbohydrates, protein, and fat, rich in vitamins B and A, high in calcium, iron, and zinc, and also contains potassium, phosphorus, magnesium, zinc, copper, and manganese.
